It has been a hot minute but forgive me I have been on vacation. Finally able to cross the border and travel, so I have been sunning myself in Florida for the past three weeks. And yes Pineapple Margarita’s have been a constant menu item. Plus seems pretty appropriate to be sharing this fun recipe this week in celebration of Cinco de Mayo.
Summer Cocktails
Sampling tasty cocktails poolside has been a glorious way to celebrate my return to travel. Sipping cocktails poolside and sampling all the unique liquor (spirits) we can buy in the US of A. Margarita’s have always been a huge hit in our family but pineapple was not something I had tried in the past. A little sweet but totally refreshing.
What do I need for a Pineapple Margarita
A Pineapple Margarita is not much different than your traditional margarita. Subbing the orange juice for Pineapple juice and you are ready to go. Add some pineapple garnish, pour in a great glass and you are set to enjoy the moment.
How to make a Margarita
Creating this refreshing drink is managed in a few simple steps. Basically mix into shaker, shake and then pour. It is ready, set, go. If you are not an on the rocks person, pull out the blender and blend it all together with ice. My personal preference is the frozen but Kent likes his on the rocks best.

Pineapple Margarita
Equipment
- 1 Cocktail shaker
- 1 Jigger
- 1 Rocks or coupe glass
Ingredients
- 2 oz. Tequila
- 1 oz. Triple sec
- 3 oz. Pineapple juice
- .5 oz. Simple syrup
- .5 oz. Lime juice
- Margarita salt or Tajin
- Lime and pineapple slices *for garnish
Instructions
- Fill cocktail shaker with ice
- Add liquids to shaker
- Shake vigorously for 8-10 seconds
- Pour over fresh ice into salt rimmed glass
